Trentino cuisine is one of Italy’s lesser-known regional traditions, but those who discover it rarely forget it. It is mountain cooking — substantial, seasonal — with roots mixing Alpine, Venetian and Tyrolean traditions.
The dishes to know
Canederli are large dumplings made from stale bread kneaded with eggs, speck and chives, served in broth or dry with melted butter and cheese. Every Trentino grandmother has her recipe; every restaurant makes them slightly differently. They are the dish by which to judge a kitchen. Trentino speck — sweeter and less smoked than the Alto Adige variety — is almost always of quality in local butchers and delicatessens. Polenta, especially Storo polenta made from ancient stone-ground maize, accompanies porcini mushrooms, venison stew and braised game.
Where to eat
Osteria alle Due Spade, on Via Don Arcangelo Rizzi, is one of Trento’s oldest restaurants. The cooking is traditional, prices are fair and service is straightforward. The canederli and braised meat are the most recommended dishes.
Ristorante Accademia — next to the hotel — offers refined Trentino cuisine with seasonal ingredients and a well-selected local wine list.
Trattoria Due Mori, on Via San Marco, is an unpretentious place with genuine home cooking. Open for lunch, frequented by neighbourhood workers.
When to go
For the most authentic Trentino cooking, avoid July and August when some restaurants adapt their menus for international tastes. Spring and autumn are the best seasons for seasonal dishes in their most genuine form.
